Ayam Pong Tay

Ingredients :
1 kg chicken - chopped into pieces
10 cloves small onion - peeled & ground
5 cloves garlic - peel & ground
Cooking oil
2 tbsp taocheo
8 pieces dried mushrooms - soaked till soft
500 ml water
1 tbsp dark soya sauce
3 no potatoes - peeled & quartered
1 tbsp rice wine
2 tomatoes - quartered 

Method
1. Heat oil. When hot, fry ground onions & garlic till fragrant.
2. Add taocheo & fry 1 min.
3. Add mushroom slices & fry till fragrant.
4. Add chicken pieces & potatoes & stir fry over high heat.
5. Add rice wine & dark soya sauce & stir fry.
6. Add tomatoes.
7. Add water & cover & let it simmer for 20 min. Season with salt. Thicken with cornstarch if you want a thicker sauce.
8. Serve.
