Artisan bread - sponge starter dough

Ingredients:
Bread flour 300g
Yeast 1/8 tsp
Water 210g
Salt 1/8 tsp

Total wt -511g

Method :
Mix the above till smooth. About 8 min. Not need to reach elastic.
 Cover & let ferment for at least 8 hours or overnight in fridge.

Walnut paste - Joyoung by Lacey

Walnut Paste 合桃糊

Improves brain function, sleep quality, blood regulation and prevents constipation

Ingredients...
Walnut 75gm
Red Rock Sugar 40-45gm
Water 500ml
Peanuts 1tbsp (baked)
Soymilk or Evaporated Milk 50 ml
Rice 1tbsp (soak for 2 hrs)


Method
1. Put walnut into the boiling water to boil for a while, discard the skin and drain dry
2. Bake at 150ºC for 20minutes till golden
3. Place (2) walnuts, water, peanut and rice into Joyoung soymilk maker,cover the lid, turn on the power, and select “Rice Paste” button. The machine will beep when it is done.
4. Lastly, add rock sugar and evaporated milk, stir till sugar dissolved.

合桃糊
(补脑补气, 改善失眠, 动脉硬化和便秘)
材料
合桃 75克
红冰糖 40-45克
水 500毫升
烘香花生 1汤匙
花奶或纯豆浆 50毫升
白米 1汤匙(浸泡2小时)
做法
1. 合桃先用滚水滚一滚,去胶质,隔干。
2. 然后放入预热烘炉150ºC打风烤20分钟至金黄色。
3.将(2)合桃,水,花生,白米放入九阳豆浆机,按下“Rice Paste”键, 煮至豆浆机提示米糊做好。
4. 最后加入冰糖,花奶搅至糖溶。

Lemon Grass Tea - Joyoung by Lacey

Lemon Grass Tea 香茅水

Ingredients

Lemon Grass 4 pcs
Rock Sugar 1/2 cup
Water level 1200-1300ml
Method:
1. Wash lemon grass and cut all into about 1.5 cm thick.
2. Put them into the Joyoung jug, together with the rock sugar.
3. Add water upto 1200 - 1300ml level in your Joyoung jug.
4. Press 'Grains' function.
5. When it is done, filter the lemon grass and the tea is ready to drink.

香茅水
(含抗菌和抗真菌。 有安神,祛风感冒咳嗽作用)
材料
香茅 4 条
冰糖 1/2 杯
水位 1200-1300 ml
做法
1 将香茅洗净后切大约1.5cm 厚。
2 将切了的香茅和冰糖加入九阳豆浆机壶里。
3 水加至1200-1300ml 水位。
4 按下‘Grains'键。
5 煮至豆浆机提示做好,过滤后即可享用。

Black sesame paste - Joyoung

Black Sesame Paste

Ingredients
Black sesame: 1 cup
White/glutinous rice: 1/2 cup
Water: 900ml...
Oats: 2 tbsp
Almond: 10 pcs
Kidney Beans: 8 pcs (Optional)


Method:
Place all ingredients into Joyoung soymilk maker, cover the lid, turn on the power and select"Rice Paste" button. The machine will beep when it is done.

Hor Fan

Recipe as follow for 4-5 pax
ingredients :
Thick hor fun fm wet market 1kg
minced garlic
Fish cake 3pcs sliced it
crabstick 6pcs cut into half
lobster ball 6pcs cut into half
chye sim cut & rinse set aside
3 beaten eggs
250ml X 2 pkt chicken stock + 2 pkt tap water
cornflour mixture for thickening gravy
Method:
Heat wok with abit of oil & put thick hor fun in wok. Add light soy sauce (abt 2 tbsp) & dark sauce to go around (depends how dark u like)
Have a quick toss & dish up set aside.
Use the same wok add abit of oil to sauté minced garlic & put in fish cake stir fry awhile.
Pour in 2 pkts of chicken stock plus 2 pkts of tap water. Add 1 tbsp light soy sauce, 1 tbsp fish sauce, 1 tbsp oyster sauce & pepper.
Add in lobster ball, crabstick & chye sim & let it boil.
Stir in cornflour mixture
Lastly add in beaten eggs.

Lemongrass baked chicken




Honey Lemongrass Baked Chicken Recipe

Serves 2-3 | Prep Time: 10 Minutes | Cook Time: 20-25 Minutes

Ingredients:

1 1/2 lbs chicken drumsticks
 One lemongrass, top part trimmed off
 4 garlic, peeled and chopped

Marinade:

1 1/2 tablespoons soy sauce
 1/2 tablespoon oyster sauce or fish sauce
 1 tablespoon honey
 1 teaspoon sesame oil
 3 heavy dashes white pepper
 Pinch of salt

Method:

Cut the lemongrass into small rings, then use a mortar and pestle to pound them lightly. This will help release the aromas and wonderful fragrance of the lemongrass. If you don’t have a mortar and pestle, you can use the back of your knife to pound them.

Rinse the chicken and pat dry with paper towels. Add the lemongrass and garlic to the chicken and gently rub them on the chicken. Add all the Marinade ingredients to the chicken, stir to mix well so the chicken drumsticks are nicely marinated with all the ingredients. Set aside to marinate for at least 30 minutes, or best for a few hours.

Pre-heat the oven to 375F. Line the chicken on a tray lined with baking sheet and bake for 30-40 minutes in the middle of the oven, or until the surface turn golden brown, slightly charred, and the inside is cooked through. Transfer the chicken out, keep the tasty juices that seep out from the chicken, and serve immediately.

Cook’s Note:

If there are burnt lemongrass and garlic on the chicken, scrape them off before eating.
